good morning bean burritos
We needed a quick and easy early morning Mexican food breakfast and I had a craving for bean burritos. I had an abundant supply of rotel tomatoes on hand and some left over salsa from last nights snack and quickly put this together. So yummy and satisfying!

Ingredients
- SAUCE:
- 1 can rotel tomatoes
- 1/2 cup salsa (like picante)
- THE INSIDE:
- 1 can refried beans
- 1/3 cup onions, diced
- 2-3 cups shredded cheddar cheese
- 4 - flour tortillas
- GARNISH:
- - cilantro, fresh
- - sour cream
How To Make good morning bean burritos

Step 1In a saucepan combine rotel tomatoes, salsa and onions. Bring to a boil and simmer about 10 miinutes

Step 2In another saucepan or bowl in a microwave, heat refried beans.

Step 3In an 8 x 9 baking dish, spoon some of the salsa mix on the bottom.

Step 4Form burritos by spooning beans and cheese, then roll up burrito style. Place on top of the salsa.

Step 5Top burritos with remaining salsa and sprinkle with cheese. Bake at 350 F for about 20-25 minutes until hot and bubbly.

Step 6Garnish with cilantro and serve with sour cream on the side.
