This is my first attempt at using coconut flour in pancakes. Delicious!

Ingredients

Add to Grocery List

1/4 c
all purpose gluten free flour (i use king arthur)
1/4 c
coconut flour
1 tsp
baking powder
2 tsp
flax seeds
2 Tbsp
water
1/2 Tbsp
honey
1/2 tsp
vanilla extract
1 tsp
cinnamon
2 c
liquid (i used unsweetened vanilla hemp milk)

How to Make Gluten Free Coconut Flour Pancakes

Step-by-Step

  • 1Grind flax seeds into a meal. Soak in 2 Tbsp. water for 5 minutes.
  • 2Mix remaining ingredients. Stir in the flax seed meal in its water.
  • 3Cook as you would any pancake recipe. These will take a bit longer to cook through than a regular pancake batter.
  • 4Serve with fruit topping, honey, or maple syrup.
