gluten free coconut flour pancakes

This is my first attempt at using coconut flour in pancakes. Delicious!

Ingredients

  • 1/4 cup all purpose gluten free flour (i use king arthur)
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 2 teaspoons flax seeds
  • 2 tablespoons water
  • 1/2 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups liquid (i used unsweetened vanilla hemp milk)

How To Make gluten free coconut flour pancakes

  • Step 1
    Grind flax seeds into a meal. Soak in 2 Tbsp. water for 5 minutes.
  • Step 2
    Mix remaining ingredients. Stir in the flax seed meal in its water.
  • Step 3
    Cook as you would any pancake recipe. These will take a bit longer to cook through than a regular pancake batter.
  • Step 4
    Serve with fruit topping, honey, or maple syrup.
