This is my first attempt at using coconut flour in pancakes. Delicious!

Ingredients

  • 1/4 c
    all purpose gluten free flour (i use king arthur)
  • 1/4 c
    coconut flour
  • 1 tsp
    baking powder
  • 2 tsp
    flax seeds
  • 2 Tbsp
    water
  • 1/2 Tbsp
    honey
  • 1/2 tsp
    vanilla extract
  • 1 tsp
    cinnamon
  • 2 c
    liquid (i used unsweetened vanilla hemp milk)

How to Make Gluten Free Coconut Flour Pancakes

Step-by-Step

  1. Grind flax seeds into a meal. Soak in 2 Tbsp. water for 5 minutes.
  2. Mix remaining ingredients. Stir in the flax seed meal in its water.
  3. Cook as you would any pancake recipe. These will take a bit longer to cook through than a regular pancake batter.
  4. Serve with fruit topping, honey, or maple syrup.
