- 1 medium onion chopped
- 1 medium celery stalk, chopped
- 1/3 cup chopped bell pepper
- 1/2 cup water
- 4 large potatoes, bioled and peeled
- 1 cup cooked rice
- 1 tablespoon lite soy sauce

Step 1In a large nonstick skillet saute the onion, celery, and green peppers in 1/4 cup water.

Step 2Add the potatoes and the remaining 1/4 cup water

Step 3Cook, stirring gently until the vegetables are tender, About 5 minutes.

Step 4Stir in the rice, cumin, and soy sauce.

Step 5Cook, stirring until the bottom browns lightly about 2 minutes.
