We've heard the hype about avocado toast, but it wasn't regularly on our menu. After trying Patrick's version, we're now going to be thinking about this toast all the time. Balsamic vinegar adds tangy flavor to the sliced cherry tomatoes. Crispy pancetta sprinkled on top adds texture and saltiness. We love the kick of spice from Siracha honey drizzle. Once you break into the egg, it creates a sauce. There are tons of flavors in this avocado toast and they are fantastic together.

Ingredients For ultimate avocado toast

  • 4 slice
    sourdough bread
  • 5
    avocados
  • 1 Tbsp
    lemon juice
  • 8 slice
    pancetta
  • 1 c
    cherry tomatoes
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    balsamic vinegar
  • 1 clove
    garlic, minced
  • 1/3 c
    honey
  • 1 Tbsp
    sriracha
  • 4
    eggs

How To Make ultimate avocado toast

  • Toasting slices of bread while oven preheats.

    Preheat oven to 400 F. Toast slices of bread until crisp and golden brown.
  • Mashed avocado in a bowl.

    Mash avocados until the consistency is smooth with small chunks. Sprinkle lemon juice to prevent browning.
  • Baking pieces of pancetta.

    Line a baking sheet with parchment paper. Place pancetta on parchment paper. Bake for 10 minutes. Drain on paper towels.
  • Reducing the heat of the oven.

    Reduce oven to 350 F.
  • Marinating cherries in olive oil, balsamic vinegar, and garlic.

    Cut cherry tomatoes in circles. Marinate in olive oil, balsamic vinegar, and garlic.
  • Honey and sriracha in a small bowl.

  • Baking eggs in a cupcake tin.

    Place 1 tablespoon of water in 4 muffin tins. Crack egg into the tin. Bake for 10 minutes until egg whites are set and yolk is runny.
  • Avocado on toast with pancetta, marinated tomatoes, a drizzle of Sriracha honey, and a poached egg.

    Spread mashed avocado on toast. Top with pancetta and marinated tomatoes. Drizzle sriracha honey on top. Top with a poached egg. Serve.
