This is is a special breakfast perfect for when you want something light and healthy, and have a little extra time in the morning.

  • 4 slice
    sourdough bread
  • 5
  • 1 Tbsp
    lemon juice
  • 8 slice
  • 1 c
    cherry tomatoes
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    balsamic vinegar
  • 1 clove
    garlic, minced
  • 1/3 c
  • 1 Tbsp
  • 4

How to Make Ultimate Avocado Toast


  1. Preheat oven to 400 F.
  2. Toast slices of bread until crisp and golden brown.
  3. Mash avocados until the consistency is smooth with small chunks. Sprinkle lemon juice to prevent browning.
  4. Line a baking sheet with parchment paper. Place pancetta on parchment paper. Bake for 10 minutes. Drain on paper towels.
  5. Reduce oven to 350 F.
  6. Cut cherry tomatoes in circles. Marinade in olive oil, balsamic vinegar, and garlic.
  7. Combine honey and sriracha.
  8. Place 1 tablespoon of water in 4 muffin tins. Crack egg into the tin. Bake for 10 minutes until egg whites are set and yolk is runny.
  9. Spread mashed avocado on toast. Top with pancetta and marinated tomatoes. Drizzle sriracha honey on top. Top with a poached egg. Serve.
