pancake almondine
I eat pancakes every once in a while and when I do I make them like this. I like the fruit and nut in the pancake with a hint of almond and vanilla. I am tempted to use spices here, but it would take away from the plain batter taste that tastes good when you drink a glass of cold milk.

With a slight almond flavor, this pancake recipe is a great way to start the day. The pancakes are fluffy and tender. Thanks to almond and vanilla extracts they have a sweet flavor. We loved the texture of chewy raisins and crunchy almonds added to the pancakes. Also, this makes about 3 - 4 pancakes, so a great recipe if you're only feeding one or two people. Top with a pat of butter and warm maple syrup for a wonderful and easy Sunday morning breakfast.

Ingredients
- 1/2 cup pancake mix
- 1/4 cup plus 2 Tbsp water
- 1/8 teaspoon almond extract
- 1/8 teaspoon vanilla extract
- 1 tablespoon sliced almonds toasted
- 1 tablespoon raisins
- 3 tablespoons maple syrup
- 1 teaspoon butter
How To Make pancake almondine

Step 1Mix water in pancake mix. Make sure it's not too thick or runny. Start with 1/4 cup of water and add more if needed.

Step 2Add almond extract and vanilla; mix.

Step 3Add toasted almonds and raisins; mix.

Step 4Heat a cast iron skillet with cooking spray. Add 1/4 cup of batter and cook for 1 minute or until golden brown.

Step 5Flip and cook the second side for 1 minute more or until golden brown.

Step 6Heat maple syrup in the microwave.

Step 7Pour over the pancakes that have been topped with butter. I like to serve with an ice cold cup of milk.
