I made these last weekend for my fussy grandkids and they loved them, especially the syrup! Give this recipe a try some weekend, you'll fall in love too!

oil, i used vegetable oil
1/2 c
apple cider
3 Tbsp
packed light brown sugar
1-1/2 tsp
lemon juice
1-1/2 tsp
1/2 c
whole wheat pastry flour
1/4 c
plus 2 tbsp white flour
1 tsp
baking powder
1/4 tsp
baking soda
1 large
1 large
egg white
1/2 c
low fat buttermilk
1 large
apple, peeled, diced
4 slice
center cut bacon, cooked, cooled and crumbled

How to Make Apple-bacon filled pancakes w/ cider syrup


  • 1In small pan, over medium heat, combine cider, 2 tbsp brown sugar, lemon juice and cornstarch. Bring to a boil, whisking constantly until thickened. Set aside.
  • 2In medium bowl, combine whole wheat flour, white flour, baking powder, baking soda and 1 tbsp brown sugar, mix to combine. In lg bowl, Whisk egg, egg white and buttermilk until combined. Whisk dry ingredients into wet ingredients. Stir in diced apple and bacon.
  • 3heat oil in lg skillet, over medium-high heat. Scoop 1/4 cup batter into skillet. Cook until bubbly, flip and continue cooking until light brown. Reheat syrup and serve over pancakes.
