apple-bacon filled pancakes w/ cider syrup
I made these last weekend for my fussy grandkids and they loved them, especially the syrup! Give this recipe a try some weekend, you'll fall in love too!

Ingredients
- 1/2 teaspoon oil, i used vegetable oil
- 1/2 cup apple cider
- 3 tablespoons packed light brown sugar
- 1-1/2 teaspoon lemon juice
- 1-1/2 teaspoon cornstarch
- 1/2 cup whole wheat pastry flour
- 1/4 cup plus 2 tbsp white flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 large egg
- 1 large egg white
- 1/2 cup low fat buttermilk
- 1 large apple, peeled, diced
- 4 slices center cut bacon, cooked, cooled and crumbled
How To Make apple-bacon filled pancakes w/ cider syrup

Step 1In small pan, over medium heat, combine cider, 2 tbsp brown sugar, lemon juice and cornstarch. Bring to a boil, whisking constantly until thickened. Set aside.

Step 2In medium bowl, combine whole wheat flour, white flour, baking powder, baking soda and 1 tbsp brown sugar, mix to combine. In lg bowl, Whisk egg, egg white and buttermilk until combined. Whisk dry ingredients into wet ingredients. Stir in diced apple and bacon.

Step 3heat oil in lg skillet, over medium-high heat. Scoop 1/4 cup batter into skillet. Cook until bubbly, flip and continue cooking until light brown. Reheat syrup and serve over pancakes.
