Ingredients

  • 4 large eggs
  • 2 tablespoons half and half
  • 1/8 teaspoon ground black pepper
  • - salt, to taste
  • 1 tablespoon unsalted butter
  • 1/2 cup flaked smoked salmon (not lox)
  • 1/3 cup shredded gruyere cheese

How To Make swiss smoked salmon omelet

  • Step 1
    In small bowl, blend eggs, milk, pepper and salt.
  • Step 2
    In 10-inch skillet, melt butter over medium heat.
  • Step 3
    Pour egg mixture into skillet. Cook until eggs are set, about 5 minutes, lifting edges occasionally with spatula and letting liquid run under edges.
  • Step 4
    Sprinkle salmon and cheese over one half of the omelet.
  • Step 5
    With spatula, carefully fold other half over filling. Cook until cheese melts, 1-2 minutes.
  • Step 6
    Divide in half and serve.
