Here I am alone again tonight...what to eat? Chickens have been laying and I have a lot of extra eggs. I made up this recipe. Nothing really special but the flavors blended super well and I was very satisfied! I hope you will try it too. Feel free to use what you have or to alter for your personal taste! YUM!
1Wrap as many tortillas as you will need in a towel and set the microwave for a minute. You can start them when the rest of the stuff is nearly done.
2In a heavy skillet start cooking chorizo, Squeeze it out of the skin and cook on low heat. Add the cubed partially cooked potatoes and the thinly sliced sweet onion. You can add some olive oil if it seems dry.
3Crack eggs into a cup and scramble with a whisk. Add some cold water and whisk again.
4Heat a smaller skillet and add some butter. When it is hot dump in the scrambled eggs. Work with a rubber spatula until nearly done and add cheese curds. Turn off the heat.
5Turn on the micro for the tortillas. when heated put 2 down on a plate and add eggs, then chorizo, then guacamole, queso fresco, cilantro and salsa.
