Yum! This is a delicious, clean egg scramble breakfast to start your day with. The spices and fresh veggies give the Spanish vibe with a small kick. Combining the egg and veggies is tasty on its own, but the sliced avocado on top makes this scramble special. Sprinkled with fresh cilantro, salt, and pepper, this recipe makes clean eating such a treat.

Ingredients

  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1 - green onion, chopped
  • 1 tablespoon chopped cilantro
  • 1/2 - avocado
  • 2 dashes cayenne
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1 - egg
  • 1/2 tablespoon olive or coconut oil
  • 1 dash Kosher salt
  • 1 dash black pepper

How To Make clean & healthy spanish scramble

  • Peppers, onion, and cilantro chopped on a cutting board.
    Step 1
    Dice and chop peppers, onion, and cilantro.
  • Sliced avocado on a cutting board.
    Step 2
    Slice avocado and set aside.
  • Scrambled eggs and seasonings in a bowl.
    Step 3
    Scramble egg and add all seasonings. Set aside.
  • Sauteeing peppers, onions, and cilantro in a pan.
    Step 4
    Put coconut or olive oil in small saute pan and heat. Saute peppers, onions and half cilantro in oil.
  • Pouring eggs into the pan.
    Step 5
    Pour egg over saute mixture in pan. Stir until eggs are cooked.
  • Cooked eggs on a plate with sliced avocado.
    Step 6
    Put onto a plate, add sliced avocado on top, and garnish with remaining cilantro.
  • Spanish Scramble ready to be served.
    Step 7
    Yummm! Enjoy!
