Combining the egg and veggies is tasty on its own, but the sliced avocado on top makes this scramble special. Ingredients
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1 - green onion, chopped
- 1 tablespoon chopped cilantro
- 1/2 - avocado
- 2 dashes cayenne
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1 - egg
- 1/2 tablespoon olive or coconut oil
- 1 dash Kosher salt
- 1 dash black pepper
How To Make clean & healthy spanish scramble

Step 1Dice and chop peppers, onion, and cilantro.

Step 2Slice avocado and set aside.

Step 3Scramble egg and add all seasonings. Set aside.

Step 4Put coconut or olive oil in small saute pan and heat. Saute peppers, onions and half cilantro in oil.

Step 5Pour egg over saute mixture in pan. Stir until eggs are cooked.

Step 6Put onto a plate, add sliced avocado on top, and garnish with remaining cilantro.
