Blue Ribbon Recipe

Notes from the Test Kitchen:
Yum, I could start every day with this tasty scramble. The spices are definitely bold. I especially loved the addition of cumin. But, the avocado on top cools the spices down. I think this would be great served with a side of pico de gallo too. A kickin' recipe to start your day!

Ingredients

1/4 c
red bell pepper
1/4 c
green bell pepper
1
green onion
1 Tbsp
chopped cilantro
1/2
avocado
2 dash(es)
cayenne
1/4 tsp
cumin
1/4 tsp
chili powder
1
egg
1/2 Tbsp
olive or coconut oil
1 dash(es)
kosher salt
1 dash(es)
black pepper

Step-By-Step

1Dice and chop peppers, onion and cilantro. Slice avocado and set aside. Scramble egg and add all seasonings and set aside.
2Put coconut or olive oil in small saute pan and heat.
3Saute peppers, onions and half cilantro in oil.
4Pour egg over saute mixture in pan ... stir until egg is cooked.
5Put onto plate, add sliced avocado on top and garnish with remaining cilantro. Yummm! Enjoy!
