Yum! This is a delicious, clean egg scramble breakfast to start your day with. The spices and fresh veggies give the Spanish vibe with a small kick. Combining the egg and veggies is tasty on its own, but the sliced avocado on top makes this scramble special.   • 1/4 c
    diced red bell pepper
  • 1/4 c
    diced green bell pepper
  • 1
    green onion, chopped
  • 1 Tbsp
    chopped cilantro
  • 1/2
  • 2 dash(es)
  • 1/4 tsp
  • 1/4 tsp
    chili powder
  • 1
  • 1/2 Tbsp
    olive or coconut oil
  • 1 dash(es)
    Kosher salt
  • 1 dash(es)
    black pepper

How to Make Clean & Healthy Spanish Scramble


  1. Dice and chop peppers, onion, and cilantro.
  2. Slice avocado and set aside.
  3. Scramble egg and add all seasonings. Set aside.
  4. Put coconut or olive oil in small saute pan and heat. Saute peppers, onions and half cilantro in oil.
  5. Pour egg over saute mixture in pan. Stir until eggs are cooked.
  6. Put onto a plate, add sliced avocado on top, and garnish with remaining cilantro.
  7. Yummm! Enjoy!
