bonnie's bacon spinach frittata

I created this recipe for breakfast one morning. It may be a simple recipe, but it is not simple in taste. It is made from most ingredients that you have in your refrigerator. This is a high protein dish, perfect for Atkins followers. Enjoy! Recipe and photos are my own.

Ingredients

  • 2 - eggs slightly beaten
  • 1/2 - white onion, small dice
  • 1 - tablespoon olive oil
  • 3 - tablespoons of cream
  • 3/4 - cup raw spinach leaves
  • 1/2 - cup sharp cheddar cheese
  • 1/4 - teaspoon chipotle pepper
  • 2 - slices of cooked crisp bacon, crumbled
  • - season to taste at the table with salt and pepper if desired

How To Make bonnie's bacon spinach frittata

  • Step 1
    Assemble all the ingredients, fry the bacon crisp, cool and crumble. Thin slice the sharp cheese and dice the onion. Saute the onion in a medium non stick skillet in one tablespoon of olive oil over medium low heat until golden brown.
  • Step 2
    Add the cream to the onions. Stir for a minute or two until the mixture thickens. This carmelizing will make the onions taste very sweet and give the frittata a nice flavor.
  • Step 3
    Add the beaten eggs and chipotle pepper to the mixture.
  • Step 4
    Add the spinach leaves.
  • Step 5
    Add the cheese slices.
  • Step 6
    Turn the heat to low and let the frittata cook until it sets. Add a glass lid after one minute. The frittata is done when the edges turn brown and the mixture is solid.
  • Step 7
    Add the bacon, and serve immediately. Here is how it looks! Enjoy!
