I created this recipe for breakfast one morning. It may be a simple recipe, but it is not simple in taste. It is made from most ingredients that you have in your refrigerator. This is a high protein dish, perfect for Atkins followers. Enjoy!

Ingredients

eggs slightly beaten
1/2
white onion, small dice

tablespoon olive oil

tablespoons of cream
3/4
cup raw spinach leaves
1/2
cup sharp cheddar cheese
1/4
teaspoon chipotle pepper
2
slices of cooked crisp bacon, crumbled
season to taste at the table with salt and pepper if desired

How to Make BACON SPINACH FRITTATA -- BONNIE'S

Step-by-Step

  • 1Assemble all the ingredients, fry the bacon crisp, cool and crumble. Thin slice the sharp cheese and dice the onion.

    Saute the onion in a medium non stick skillet in one tablespoon of olive oil over medium low heat until golden brown.
  • 2Add the cream to the onions. Stir for a minute or two until the mixture thickens. This carmelizing will make the onions taste very sweet and give the frittata a nice flavor.
  • 3Add the beaten eggs and chipotle pepper to the mixture.
  • 4Add the spinach leaves.
  • 5Add the cheese slices.
  • 6Turn the heat to low and let the frittata cook until it sets. Add a glass lid after one minute. The frittata is done when the edges turn brown and the mixture is solid.
  • 7Add the bacon, and serve immediately.
