Recipe taken from "Everyday Grain-Free Gourmet" cookbook. I've been making these for months now, each time they come out PERFECT.

    almond meal
  • 1/4 tsp
  • 1/4 tsp
    baking soda
  • 4
  • 2 Tbsp
  • 1 tsp
    vanilla extract
  • ·
    cooking oil or spray

How to Make Gluten and Grain-Free Pancakes


  1. Mix all dry ingredients in a small bowl.
  2. In a medium bowl, mix eggs, honey and vanilla.
  3. Add dry ingredients to wet. Mix well.
  4. Refrigerate the mixture for 10-15 minutes.
  5. Warm up a frying pan on high heat with a thin layer of cooking oil or non-stick cooking spray of your choice.
  6. Fry pancakes about 1 minute on each side, until golden brown.
  7. Serve with fresh fruits, syrup or honey.
