gluten and grain-free pancakes

Recipe taken from "Everyday Grain-Free Gourmet" cookbook. I've been making these for months now, each time they come out PERFECT.

Ingredients
- 1 cup almond meal
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 4 - eggs
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- - cooking oil or spray
How To Make gluten and grain-free pancakes

Step 1Mix all dry ingredients in a small bowl.

Step 2In a medium bowl, mix eggs, honey and vanilla.

Step 3Add dry ingredients to wet. Mix well.

Step 4Refrigerate the mixture for 10-15 minutes.

Step 5Warm up a frying pan on high heat with a thin layer of cooking oil or non-stick cooking spray of your choice.

Step 6Fry pancakes about 1 minute on each side, until golden brown.

Step 7Serve with fresh fruits, syrup or honey.
