These pancakes are a great way to start the day; these heirloom pancakes were grandma's favorite recipe- for a winter breakfast to mix up and fry . These taste wonderful and I like to serve these with thinned down lemon curd heated and topped with sour cream.

Ingredients

  • 1 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon each ground cinnamon and ground ginger
  • 1 pinch ground cloves
  • 1/2 cup skim milk
  • 3 tablespoons dark molasses
  • 1 tablespoon canola oil
  • 1 large egg, slightly beaten

How To Make gingerbread pancakes-healthy

  • Step 1
    Spray skillet with cooking spray. Heat skillet or electric fry pan on medium heat (about 350^ for electric pan) Cook large spoonfuls of batter , turning once when bubbles appear on surface.
  • Step 2
    Combine dry ingredients. In a large measuring cup or medium bowl combine wet ingredients. Now mix both together until just moisten and blended. Set batter aside for 10 minutes before pouring in batter.
  • Step 3
    Serve with thinned down lemon curd and a dollop of sour cream or , if prefer, applesauce or apple butter.
