- Spray skillet with cooking spray.
Heat skillet or electric fry pan on medium heat (about 350^ for electric pan)
Cook large spoonfuls of batter , turning once when bubbles appear on surface.
- Combine dry ingredients. In a large measuring cup or medium bowl combine wet ingredients. Now mix both together until just moisten and blended. Set batter aside for 10 minutes before pouring in batter.
- Serve with thinned down lemon curd and a dollop of sour cream or , if prefer, applesauce or apple butter.
