These pancakes are a great way to start the day; these heirloom pancakes were grandma's favorite recipe- for a winter breakfast to mix up and fry . These taste wonderful and I like to serve these with thinned down lemon curd heated and topped with sour cream.

Ingredients
- 1 cup all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon each ground cinnamon and ground ginger
- 1 pinch ground cloves
- 1/2 cup skim milk
- 3 tablespoons dark molasses
- 1 tablespoon canola oil
- 1 large egg, slightly beaten
How To Make gingerbread pancakes-healthy

Step 1Spray skillet with cooking spray. Heat skillet or electric fry pan on medium heat (about 350^ for electric pan) Cook large spoonfuls of batter , turning once when bubbles appear on surface.

Step 2Combine dry ingredients. In a large measuring cup or medium bowl combine wet ingredients. Now mix both together until just moisten and blended. Set batter aside for 10 minutes before pouring in batter.

Step 3Serve with thinned down lemon curd and a dollop of sour cream or , if prefer, applesauce or apple butter.
