3/4 c
soy milk
2 Tbsp
lemon juice
1 c
all purpose flour
2 Tbsp
1 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp
2 Tbsp
melted margarine (earth balance)
egg equivalent (ener-g egg replacer)

How to Make Fluffy Vegan Pancakes


  • 1add lemon juice to soy milk and let sit while you prepare the remaining ingredients
  • 2prepare egg replacer. Ener-G directions are to mix 1.5 tsp mix with 2 tbs water - whisk well
  • 3melt margarine and allow to cool a bit
  • 4combine dry ingredients together in a medium sized bowl
  • 5add margarine to 'egg' and whisk well, then add to soy milk, whisking again.
  • 6pour wet mixture into dry ingredients and mix by hand. Don't over do it! small lumps are ok :)
  • 7Pour 1/2 cup onto heated griddle, cook until bubbly on the edges, flip once cooking for a minute or so and enjoy ! <3
