Ingredients
- 3/4 cup soy milk
- 2 tablespoons lemon juice
- 1 cup all purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons melted margarine (earth balance)
- 1 - egg equivalent (ener-g egg replacer)
How To Make fluffy vegan pancakes

Step 1add lemon juice to soy milk and let sit while you prepare the remaining ingredients

Step 2prepare egg replacer. Ener-G directions are to mix 1.5 tsp mix with 2 tbs water - whisk well

Step 3melt margarine and allow to cool a bit

Step 4combine dry ingredients together in a medium sized bowl

Step 5add margarine to 'egg' and whisk well, then add to soy milk, whisking again.

Step 6pour wet mixture into dry ingredients and mix by hand. Don't over do it! small lumps are ok :)

Step 7Pour 1/2 cup onto heated griddle, cook until bubbly on the edges, flip once cooking for a minute or so and enjoy ! <3
