Rhubarb grew so nicely this year. So we have to use it. This is a very good recipe. The muffins are soft and delicious.

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup oatmeal, uncooked
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/2 cup oil
  • 1 cup buttermilk
  • 1 1/2 cups dieced rhubarb
  • 1/2 cup nuts or almonds
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon

How To Make rhubarb muffins

  • Step 1
    Mix first 5 ingredients.
  • Step 2
    In a separate bowl, mix brown sugar, egg, oil and buttermilk.
  • Step 3
    Add dry ingredients into wet.
  • Step 4
    Prepare topping of sugar and cinnamon and sprinkle over each each once in muffin tin.
  • Step 5
    Bake at 375 F for 20-25 minutes for large muffins and 15-20 minutes for small muffins.Make 6-8 large or 15-17 small muffins.
