Rhubarb grew so nicely this year. So we have to use it. This is a very good recipe. The muffins are soft and delicious.

  • 2 c
    all purpose flour
  • 1/2 c
    oatmeal, uncooked
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
  • 1/8 tsp
  • 3/4 c
    brown sugar
  • 1 large
  • 1/2 c
  • 1 c
  • 1 1/2 c
    dieced rhubarb
  • 1/2 c
    nuts or almonds
  • 1/3 c
    brown sugar
  • 1/2 tsp

How to Make Rhubarb Muffins


  1. Mix first 5 ingredients.
  2. In a separate bowl, mix brown sugar, egg, oil and buttermilk.
  3. Add dry ingredients into wet.
  4. Prepare topping of sugar and cinnamon and sprinkle over each each once in muffin tin.
  5. Bake at 375 F for 20-25 minutes for large muffins and 15-20 minutes for small muffins.Make 6-8 large or 15-17 small muffins.
