Rhubarb grew so nicely this year. So we have to use it. This is a very good recipe. The muffins are soft and delicious.

Ingredients
- 2 cups all purpose flour
- 1/2 cup oatmeal, uncooked
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 3/4 cup brown sugar
- 1 large egg
- 1/2 cup oil
- 1 cup buttermilk
- 1 1/2 cups dieced rhubarb
- 1/2 cup nuts or almonds
- 1/3 cup brown sugar
- 1/2 teaspoon cinnamon
How To Make rhubarb muffins

Step 1Mix first 5 ingredients.

Step 2In a separate bowl, mix brown sugar, egg, oil and buttermilk.

Step 3Add dry ingredients into wet.

Step 4Prepare topping of sugar and cinnamon and sprinkle over each each once in muffin tin.

Step 5Bake at 375 F for 20-25 minutes for large muffins and 15-20 minutes for small muffins.Make 6-8 large or 15-17 small muffins.
