Grandma McGlade would make her filled coffee cake for Sunday brunch and holidays.I was eleven the summer after my mother died and Grandma taught me a great deal about taking care of a house and cooking and baking. She gave me all her recipes.
Today I make this every holiday and always remember my Grandma McGlade,
a strong Irish women with a heart of gold.
Now I'm the grandma.I hope you will enjoy this simple coffee cake with your family and friends as much as my family has over the years.

Ingredients

1/2 c
butter, room temperature
2 c
white sugar
4
eggs beaten
3 c
unbleached white flour
2 tsp
baking powder
1/2 tsp
salt
1
milk

FILLING

2 1/2 c
brown sugar, firmly packed
4-7 Tbsp
unbleached white flour
6-8 Tbsp
butter melted
2-3 Tbsp
cinnamon, ground
1 c
pecans or walnuts chopped optional

How to Make Grandma's Filled Coffee Cake

Step-by-Step

  • 1Cream butter and sugar
    Add beaten eggs, vanilla
    Beat until fluffy
  • 2Mix all dry ingredients
  • 3Slowly beat in dry ingredients to butter mixture
    Alternate with milk
    Until well mixed
    Set aside
  • 4Mix all filling ingredients
    Set aside a least a cup
  • 5In 9×13 greased pan
    Start with layer of cake mix
    Alternate with filling until
    All is gone.
  • 6Cover top of cake with filling you set aside
  • 7Bake @ 350°
    35 min or until toothpick comes out clean
    Golden brown top
  • 8For my family I use lots of filling
    Raisins or apple slices can be added
  • 9Serve warm or cold
    Tastes great 2-3 days later, just reheat and enjoy!
