clean-eating vegetable chic-pea tacos
Lately, I have to admit; I've been eating vegetarian style. What I am discovering is 1) I like the taste of veggies, and 2) you can make them taste like almost anything. I made these tacos out of HUNGER ! LOL I wanted a one pan meal, because I wasnt feeling so good, can't sleep. This is what I came up with. You can use what ever veggies you have around the kitchen. I DID. Do this dish YOUR WAY. ENJOYcooking.....keep it clean

Ingredients
- I USED THESE VEGETABLES, BUT USE WHAT YOU'D LIKE, AND THE AMOUNT YOU WANT
- - onion
- - celery
- - garlic
- - chick peas
- - tomato
- - mushroom caps
- tablespoon chiles, canned and mild
- handfull - baby spinach
- - taco seasoning mix
- - cumin
- - taco shells
- - salt and pepper (to taste)
How To Make clean-eating vegetable chic-pea tacos

Step 1In nonstick pan add... celary, onion, peppers, (all veggies that take longer to cook) Cook until tender.

Step 2Add ALL OTHER INGREDIENTS, sprinkle with cumin, salt and taco seasoning.

Step 3Simmer 3 min. Serve on taco shell (I added a little hummus) ENJOYcooking..... keep it clean
