- 1/2 cup egg whites, i use eggbeaters
- 1 teaspoon onion, finely minced
- 1 - mushroom, chopped
- 1/4 cup fresh spinach, chopped (about 12 leaves)
- 1 tablespoon low fat cheese, shredded
- - pepper, to taste
How To Make healthy omelet on the run

Step 1Mix all ingredients in a very large microwave safe mug.

Step 2Microwave for about 3 minutes (my microwave is low watt you may need more or less time depending on your microwave).
