goat cheese and herb fritatta
I love fritattas, especially for brunch. Since i have some left over goat cheese and plenty of herbs, this is what I'll make this Sunday...Yummy! A very quick and easy and wonderfully filling recipe.

Ingredients
- 6 large eggs
- 4 - basil leaves, chopped
- - salt and pepper to taste
- 3 tablespoons olive oil
- 1 - shallot, chopped
- 10 - cherry tomatoes, halved
- 4 ounces goat cheese, crumbled
How To Make goat cheese and herb fritatta

Step 1Heat broiler, place broiler rack 6" from heat. In bowl, beat eggs, basil, a pinch of salt and a pinch of pepper.

Step 2Heat oil in lg heat proof skillet, over med-low heat. Cook shallot 3 mins. Add eggs to pan, stir gently. Cover, cook about 3 mins.

Step 3Place tomatoes and goat cheese evenly over fritatta. Place skillet in broiler. Broil 5 mins or until it seems to be set. Cut into wedges.
