goat cheese and herb fritatta

I love fritattas, especially for brunch. Since i have some left over goat cheese and plenty of herbs, this is what I'll make this Sunday...Yummy! A very quick and easy and wonderfully filling recipe.

Ingredients

  • 6 large eggs
  • 4 - basil leaves, chopped
  • - salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 - shallot, chopped
  • 10 - cherry tomatoes, halved
  • 4 ounces goat cheese, crumbled

How To Make goat cheese and herb fritatta

  • Step 1
    Heat broiler, place broiler rack 6" from heat. In bowl, beat eggs, basil, a pinch of salt and a pinch of pepper.
  • Step 2
    Heat oil in lg heat proof skillet, over med-low heat. Cook shallot 3 mins. Add eggs to pan, stir gently. Cover, cook about 3 mins.
  • Step 3
    Place tomatoes and goat cheese evenly over fritatta. Place skillet in broiler. Broil 5 mins or until it seems to be set. Cut into wedges.
