How to Make Amazing Avocado Low-Carb Egg White Extravaganza

Step-by-Step

  1. Slice avocado in half lengthwise and scoop out pulp and discard pit. Leave a little buffer of avocado against the skin to give it some integrity as it's going to hold the eggs when done. Set aside.
  2. Saute the veggies/spices in the olive oil until somewhat cooked. (I judge this by when the onion gets soft)
  3. Add in the rest of the ingredients including the avocado pulp (use as much of the avocado as you wish and save extra for another use) and cook over medium/high heat stirring very frequently with spatula until egg whites are scrambled to your liking.
  4. Immediately spoon eggs into the avocado halves and serve (sprinkle with Tabasco if you like)
