How to Make Amazing Avocado Low-Carb Egg White Extravaganza

  • 1Slice avocado in half lengthwise and scoop out pulp and discard pit. Leave a little buffer of avocado against the skin to give it some integrity as it's going to hold the eggs when done. Set aside.
  • 2Saute the veggies/spices in the olive oil until somewhat cooked. (I judge this by when the onion gets soft)
  • 3Add in the rest of the ingredients including the avocado pulp (use as much of the avocado as you wish and save extra for another use) and cook over medium/high heat stirring very frequently with spatula until egg whites are scrambled to your liking.
  • 4Immediately spoon eggs into the avocado halves and serve (sprinkle with Tabasco if you like)
