This is a fabulous, low carb yet energy-providing breakfast integrating the oh so wonderful avocado ~ Enjoy! ** If you are pressed for time, you can combine everything and cook in the microwave and then scoop into avocado or just serve on a plate

Ingredients

  • VEGGIES & SPICES
  • 1 1/2 teaspoons olive oil
  • 1/8 cup finely chopped red onion
  • 1 teaspoon minced fresh garlic
  • 1 teaspoon finely chopped jalapeno pepper (optional ~ i love hot stuff)
  • 1 pinch each: chives, white pepper, lemon thyme, tarragon and or what you have on hand
  • THE REST
  • 1 cup egg whites
  • 1 medium ripe avocado
  • 2 tablespoons unsweetened flax milk (can sub in almond milk if you prefer)
  • 1/4 cup light cream cheese
  • 1 dash tobasco sauce (optional)

How To Make amazing avocado low-carb egg white extravaganza

  • Step 1
    Slice avocado in half lengthwise and scoop out pulp and discard pit. Leave a little buffer of avocado against the skin to give it some integrity as it's going to hold the eggs when done. Set aside.
  • Step 2
    Saute the veggies/spices in the olive oil until somewhat cooked. (I judge this by when the onion gets soft)
  • Step 3
    Add in the rest of the ingredients including the avocado pulp (use as much of the avocado as you wish and save extra for another use) and cook over medium/high heat stirring very frequently with spatula until egg whites are scrambled to your liking.
  • Step 4
    Immediately spoon eggs into the avocado halves and serve (sprinkle with Tabasco if you like)
