bread crumb eggs w/black bean corn confetti

THANK YOU THANK YOU THANK YOU, Ninja Chef's mystery ingredient challenge! I have put my creative ideas onto a plate and this is WONDERFUL!!!! You all have to try this!

Ingredients

  • 3 - eggs
  • 1 - slice bread (for crumbs)
  • - salt and pepper to taste
  • - cotija cheese (optional you can use any cheese or no cheese whatever you like)
  • - sour cream for topping
  • 1-2 tablespoon olive oil
  • BLACK BEAN AND CORN CONFETTI
  • 1 can black beans, drained
  • 1 can corn, drained
  • 2 - jalapenos, fresh
  • 1 small red onion
  • 6-8 ounces roasted red peppers
  • 1 clove garlic, pressed
  • - salt and pepper to taste

How To Make bread crumb eggs w/black bean corn confetti

  • Step 1
    prepare confetti; Drain and rinse black beans, drain and rinse corn, dice red peppers, dice onion, press garlic (use powder only if you have to) remove seeds and ribs from jalepenos (you can leave as much or as little seeds and ribs to adjust heat in the confetti)add salt and pepper to taste and toss gently so you don't crush the beans.
  • Step 2
    in a very hot omlette pan put 1-2 TBLS olive oil, then crumble the slice of bread into the pan, cook until brown and crispy (see picture)
  • Step 3
    for fried eggs just don't beat the eggs first but I like mine scrammbled so I beat the eggs and poured over the toasted bread crumbs, flip once and pour out onto plate
  • Step 4
    cover with confetti and top with sour cream and cotija cheese (optional), ENJOY!! It's like toast, egss and salsa brought to another level.
