pour coconut milk in med. sauce pan, add dried fruit, vanilla and cinnamon, over med. heat bring to a full boil.
In a bowl lightly mix dry ingredients, pour slowly into boiling mixture while stirring. Stirring constantly bring to a full boil then lower heat to
simmer for about 5 minutes. a few min. longer if needed
If too thick add applesauce or more coconut milk.
Serve with fresh or frozen fruit, toast and nuts for a totally healthy breakfast.
