I prepared this dish to cook overnight. It makes a hearty healthy breakfast that is so easy. Who says they don't have time for breakfast? No excuses with this dish. I hope you all enjoy it.

Ingredients

steel cut oats (irish oats)
2 c
water
2 c
milk skim or whole milk
1 tsp
cinnamon
1/3-1/2 c
real maple syrup
8
dried chopped apricots
1
banana mashed
1/4 c
raisins
1/4 c
walnuts
1
granny smith or other apple sliced and coarsely chopped
a pinch of salt

Step-by-Step

  • 1Place oats,water, milk, salt, cinnamon, apricots, raisins maple syrup, and Banana in a baking dish deep enough to hold 2 quarts. Stir to combine. Place apples on top.
  • 2Fill slow cooker insert with enough water to come up half to 3/4 of side of baking dish.
  • 3Place casserole inside slow cooker. If you need more water to cover sides pour carefully on side of casserole dish. cover crockpot place on low. Cook 8 to 9 hours. Top with walnuts. Stir well and serve.
