I prepared this dish to cook overnight. It makes a hearty healthy breakfast that is so easy. Who says they don't have time for breakfast? No excuses with this dish. I hope you all enjoy it.

Ingredients
- 1 cup steel cut oats (irish oats)
- 2 cups water
- 2 cups milk skim or whole milk
- 1 teaspoon cinnamon
- 1/3-1/2 cup real maple syrup
- 8 - dried chopped apricots
- 1 - banana mashed
- 1/4 cup raisins
- 1/4 cup walnuts
- 1 - granny smith or other apple sliced and coarsely chopped
- - a pinch of salt

Step 1Place oats,water, milk, salt, cinnamon, apricots, raisins maple syrup, and Banana in a baking dish deep enough to hold 2 quarts. Stir to combine. Place apples on top.

Step 2Fill slow cooker insert with enough water to come up half to 3/4 of side of baking dish.

Step 3Place casserole inside slow cooker. If you need more water to cover sides pour carefully on side of casserole dish. cover crockpot place on low. Cook 8 to 9 hours. Top with walnuts. Stir well and serve.
