I prepared this dish to cook overnight. It makes a hearty healthy breakfast that is so easy. Who says they don't have time for breakfast? No excuses with this dish. I hope you all enjoy it.

Ingredients

  • 1 cup steel cut oats (irish oats)
  • 2 cups water
  • 2 cups milk skim or whole milk
  • 1 teaspoon cinnamon
  • 1/3-1/2 cup real maple syrup
  • 8 - dried chopped apricots
  • 1 - banana mashed
  • 1/4 cup raisins
  • 1/4 cup walnuts
  • 1 - granny smith or other apple sliced and coarsely chopped
  • - a pinch of salt

How To Make over night irish fruit & nut oatmeal by noreen

  • Step 1
    Place oats,water, milk, salt, cinnamon, apricots, raisins maple syrup, and Banana in a baking dish deep enough to hold 2 quarts. Stir to combine. Place apples on top.
  • Step 2
    Fill slow cooker insert with enough water to come up half to 3/4 of side of baking dish.
  • Step 3
    Place casserole inside slow cooker. If you need more water to cover sides pour carefully on side of casserole dish. cover crockpot place on low. Cook 8 to 9 hours. Top with walnuts. Stir well and serve.
