DH loves baked oatmeal so I am always looking for new ways to make it. This is my version of a recipe I fond on the internet. *10 minute cool time not included.

Ingredients
- 2 cups rolled oatmeal, not instant
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk, 1%
- 1/2 cup egg beaters egg substitute
- 1/2 cup applesauce, unsweetened
- 1/8 cup splenda brown sugar blend
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- 1-1 1/2 cups carrot, shredded (2 carrots)
- 8 ounces crushed pineapple
- 1/4 cup raisins
- - yogurt or milk for topping
How To Make baked oatmeal carrot cake version

Step 1Combine wet ingredients.

Step 2Add dry ingredients.

Step 3Bake in Pam sprayed 8" pan at 350 F for 35-45 minutes.

Step 4Let cool about 10 minutes to set-up a bit before serving.

Step 5Serve topped with yogurt or milk.
