zucchini sweet bread
This is a delicious way to use squash from the garden. Zucchini isn't the only squash we use with this recipe, it works with winter squash and with pumpkin too. The raisins, nuts, and pineapple add layers of taste to this sweet bread. We often grate the squash, freeze it, and use it at a later time. That way we can enjoy it all year long.

Ingredients
- 3 - eggs
- 2 cups sugar
- 3/4 cup oil
- 2 cups flour
- 2 tablespoons cinnamon
- 1-1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon vanilla or maple flavoring
- 1 cup nuts, chopped finely
- 1/2 cup raisins
- 2 cups gratedc zucchini
- 1/4 cup crushed pineapple, drained
How To Make zucchini sweet bread

Step 1Beat eggs and sugar together, then beat in oil.

Step 2Mix flour, cinnamon, baking powder, baking soda, vanilla, and salt, then mix this into the egg mixture.

Step 3Fold in nuts, zucchini, raisins, and pineapple.

Step 4Divide this between two well greased bread pans and bake in a 350 degree oven for 50 minutes.
