This is a delicious way to use squash from the garden. Zucchini isn't the only squash we use with this recipe, it works with winter squash and with pumpkin too. The raisins, nuts, and pineapple add layers of taste to this sweet bread. We often grate the squash, freeze it, and use it at a later time. That way we can enjoy it all year long.

Ingredients

  • 3
    eggs
  • 2 c
    sugar
  • 3/4 c
    oil
  • 2 c
    flour
  • 2 Tbsp
    cinnamon
  • 1-1/4 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 Tbsp
    vanilla or maple flavoring
  • 1 c
    nuts, chopped finely
  • 1/2 c
    raisins
  • 2 c
    gratedc zucchini
  • 1/4 c
    crushed pineapple, drained

How to Make Zucchini Sweet Bread

Step-by-Step

  1. Beat eggs and sugar together, then beat in oil.
  2. Mix flour, cinnamon, baking powder, baking soda, vanilla, and salt, then mix this into the egg mixture.
  3. Fold in nuts, zucchini, raisins, and pineapple.
  4. Divide this between two well greased bread pans and bake in a 350 degree oven for 50 minutes.
