How to Make Zucchini Bread
- Move oven rack to the lowest position. Preheat oven to 350 degrees. Grease and flour 2-9 inch loaf pans.
- Mix Zucchini, sugar, oil, vanilla and eggs in a large bowl. Stir in remaining ingredients except nuts and raisins. Then gently stir in nuts and raisins. Divide batter evenly between the 2 pans.
- Bake for 1 hour 10 minutes to 1 hour 20 minutes or till knife comes out clean.
Cool 10 minutes in pans and then turn out onto a wire rack to cool completely.
