Ingredients

  • 3 cups shredded zucchini (2-3 medium
  • 1 2/3 cups sugar
  • 2/3 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 4 - large eggs
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking powder
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins (optional)

How To Make zucchini bread

  • Step 1
    Move oven rack to the lowest position. Preheat oven to 350 degrees. Grease and flour 2-9 inch loaf pans.
  • Step 2
    Mix Zucchini, sugar, oil, vanilla and eggs in a large bowl. Stir in remaining ingredients except nuts and raisins. Then gently stir in nuts and raisins. Divide batter evenly between the 2 pans.
  • Step 3
    Bake for 1 hour 10 minutes to 1 hour 20 minutes or till knife comes out clean. Cool 10 minutes in pans and then turn out onto a wire rack to cool completely.
