Ingredients
- 3 cups shredded zucchini (2-3 medium
- 1 2/3 cups sugar
- 2/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 4 - large eggs
- 3 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon baking powder
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins (optional)
How To Make zucchini bread

Step 1Move oven rack to the lowest position. Preheat oven to 350 degrees. Grease and flour 2-9 inch loaf pans.

Step 2Mix Zucchini, sugar, oil, vanilla and eggs in a large bowl. Stir in remaining ingredients except nuts and raisins. Then gently stir in nuts and raisins. Divide batter evenly between the 2 pans.

Step 3Bake for 1 hour 10 minutes to 1 hour 20 minutes or till knife comes out clean. Cool 10 minutes in pans and then turn out onto a wire rack to cool completely.
