    shredded zucchini (2-3 medium
  • 1 2/3 c
  • 2/3 c
    vegetable oil
  • 2 tsp
    vanilla extract
  • 4
    large eggs
  • 3 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1 tsp
  • 1 tsp
  • 1/2 tsp
    ground cloves
  • 1/2 tsp
    baking powder
  • 1/2 c
    chopped nuts (optional)
  • 1/2 c
    raisins (optional)

How to Make Zucchini Bread


  1. Move oven rack to the lowest position. Preheat oven to 350 degrees. Grease and flour 2-9 inch loaf pans.
  2. Mix Zucchini, sugar, oil, vanilla and eggs in a large bowl. Stir in remaining ingredients except nuts and raisins. Then gently stir in nuts and raisins. Divide batter evenly between the 2 pans.
  3. Bake for 1 hour 10 minutes to 1 hour 20 minutes or till knife comes out clean.
    Cool 10 minutes in pans and then turn out onto a wire rack to cool completely.
