This is a very hearty bread I make every year, with the biggest zucchini from our garden. I clean them good, shred w/ skin on freeze the rest for my Mock Crab cakes thru the winter.

Ingredients

  • 1 1/2 cups sugar
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup oats, regular
  • 2 1/4 teaspoons cinnamon
  • 3 - egg
  • 2 cups shredded zucchini
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup applesauce
  • 1 cup pecans, in pieces
  • 3/4 cup craisins

How To Make summer harvest from my garden

  • Step 1
    combine all dry, basically in order
  • Step 2
    beat wet ingredients, til incorporated
  • Step 3
    mix both together, add nuts & craisins. we have used the new Ocean Spray Blueberry & Cherry Infused Craisins also. And with walnuts, or no nuts.
