summer harvest from my garden
This is a very hearty bread I make every year, with the biggest zucchini from our garden. I clean them good, shred w/ skin on freeze the rest for my Mock Crab cakes thru the winter.

Ingredients
- 1 1/2 cups sugar
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup oats, regular
- 2 1/4 teaspoons cinnamon
- 3 - egg
- 2 cups shredded zucchini
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1 cup applesauce
- 1 cup pecans, in pieces
- 3/4 cup craisins

Step 1combine all dry, basically in order

Step 2beat wet ingredients, til incorporated

Step 3mix both together, add nuts & craisins. we have used the new Ocean Spray Blueberry & Cherry Infused Craisins also. And with walnuts, or no nuts.
