Ingredients
- 1/3 cup raisins
- 1/3 cup boiling water
- 1 1/4 cups all purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 stick cold butter
- 1 cup old-fashioned oatmeal, uncooked
- 1/3 cup buttermilk
- 2-3 tablespoons reserved raisin water if needed
How To Make oatmeal scones
-
Step 1Combine raisins and boiling water, let stand 1 hour. Or, boil raisins until soft. Drain, reserving the raisins and the raisin water.
-
Step 2Mix together the dry ingredients.
-
Step 3Cut the cold butter (cubed) into the dry ingredients until it resembles coarse meal.
-
Step 4Add the drained raisins and oatmeal.
-
Step 5Stir the buttermilk into the above mixture just until moist. If mixture is too dry add 2-3 Tblsp. of the reserved raisin water.
-
Step 6Turn onto floured surface. Gently fold/knead 6-8 times. Pat into a 7- inch circle.
-
Step 7Cut into 8 wedges. Place on ungreased cookie sheet. You may sprinkle coarse sugar on top of these before baking, or drizzle your favorite powdered sugar on top before serving.
-
Step 8Bake at 375 degrees for 15 minutes or until lightly brown.
