This is the recipe I have been using for years. I don't have a great photo of it because I don't think it has lasted long enough for me to get one with more than just crumbs on a plate!

Be sure to use bananas that are beginning to turn black

Ingredients

  • 1 - 1/2 c
    all-purpose flour
  • 1 - 1/2 tsp
    baking powder
  • 1/4 tsp
    ground cinnamon
  • 1/8 tsp
    salt
  • 1
    egg
  • 1 c
    mashed bananas (3 medium)
  • 3/4 c
    sugar
  • 1/4 c
    cooking oil
  • 1/2 c
    chopped walnuts

How to Make Kitty's Favorite Banana Bread

Step-by-Step

  1. Grease the bottom and 1/2 inch up the sides of an 8x4x2 inch loaf pan and set aside
  2. In a medium mixing bowl combine all the dry ingredients i.e. flour, baking powder, baking soda, cinnamon, and salt
  3. Make a well in the center of the dry mixture and set aside
  4. In another bowl combine bananas, egg, sugar, and cooking oil. Add this mixture all at once to the dry mixture
  5. Stir just till moistened. Batter will be lumpy
  6. Gently fold in walnuts
  7. Spoon batter into baking pan
  8. Bake at 350 degrees for 50 - 55 minutes. When done sides will pull away slightly... test with toothpick
  9. Cool in pan on wire rack for 10 minutes
  10. Wrap and store over night before slicing (If you can wait that long!)
