kitty's favorite banana bread

This is the recipe I have been using for years. I don't have a great photo of it because I don't think it has lasted long enough for me to get one with more than just crumbs on a plate! Be sure to use bananas that are beginning to turn black

Ingredients

  • 1 - 1/2 cups all-purpose flour
  • 1 - 1/2 teaspoons baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 - egg
  • 1 cup mashed bananas (3 medium)
  • 3/4 cup sugar
  • 1/4 cup cooking oil
  • 1/2 cup chopped walnuts

How To Make kitty's favorite banana bread

  • Step 1
    Grease the bottom and 1/2 inch up the sides of an 8x4x2 inch loaf pan and set aside
  • Step 2
    In a medium mixing bowl combine all the dry ingredients i.e. flour, baking powder, baking soda, cinnamon, and salt
  • Step 3
    Make a well in the center of the dry mixture and set aside
  • Step 4
    In another bowl combine bananas, egg, sugar, and cooking oil. Add this mixture all at once to the dry mixture
  • Step 5
    Stir just till moistened. Batter will be lumpy
  • Step 6
    Gently fold in walnuts
  • Step 7
    Spoon batter into baking pan
  • Step 8
    Bake at 350 degrees for 50 - 55 minutes. When done sides will pull away slightly... test with toothpick
  • Step 9
    Cool in pan on wire rack for 10 minutes
  • Step 10
    Wrap and store over night before slicing (If you can wait that long!)
