This is the recipe I have been using for years. I don't have a great photo of it because I don't think it has lasted long enough for me to get one with more than just crumbs on a plate!

Be sure to use bananas that are beginning to turn black

Ingredients

1 - 1/2 c
all-purpose flour
1 - 1/2 tsp
baking powder
1/4 tsp
ground cinnamon
1/8 tsp
salt
1
egg
1 c
mashed bananas (3 medium)
3/4 c
sugar
1/4 c
cooking oil
1/2 c
chopped walnuts

How to Make Kitty's Favorite Banana Bread

Step-by-Step

  • 1Grease the bottom and 1/2 inch up the sides of an 8x4x2 inch loaf pan and set aside
  • 2In a medium mixing bowl combine all the dry ingredients i.e. flour, baking powder, baking soda, cinnamon, and salt
  • 3Make a well in the center of the dry mixture and set aside
  • 4In another bowl combine bananas, egg, sugar, and cooking oil. Add this mixture all at once to the dry mixture
  • 5Stir just till moistened. Batter will be lumpy
  • 6Gently fold in walnuts
  • 7Spoon batter into baking pan
  • 8Bake at 350 degrees for 50 - 55 minutes. When done sides will pull away slightly... test with toothpick
  • 9Cool in pan on wire rack for 10 minutes
  • 10Wrap and store over night before slicing (If you can wait that long!)
