hobo pineapple bread

I have been making this bread for twenty five years or more..This recipe was given to me by a friend.I like to make it and give a loaf to a friend or relative over the holiday's..I love this bread and have had many compliments from my friends..I hope you like it!

yield each can serves 5 slices or more

Ingredients

  • 2 1/2 cups boiling water
  • 2 cups raisins
  • 4 teaspoons baking soda
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 4 tablespoons cooking oil
  • 4 cups sifted flour
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple drained
  • 1 cup chopped nuts (optional)

How To Make hobo pineapple bread

  • Step 1
    In a large pot boil the water and add the raisins and baking soda. Let sit overnight in refrigerator. The raisins will be very plump the next day. If you don't want to let it sit overnight you can put it in the refrig for a few hours. I have always used the overnight method.
  • Step 2
    Stir raisin mixture and then add the sugar, oil and salt. Add your flour, pineapple and nuts and stir until well blended.
  • Step 3
    Divide bread mixture among three 1 lb. greased coffee cans and bake at 325 for 1 hr and 10 min. If you can't find a few can's bake in a loaf pan..
  • Step 4
    This bread is very tasty and can be eaten for breakfast or with a cup of afternoon tea. Good with butter or creamed cheese. Enjoy !
