Mom made this bread for years. Its so good warm from the oven with just butter, you won't know its healthy. It is low fat and high fiber, too.

Ingredients
- 1/2 cup raisins, optional
- 1/2 cup hot water, needed only if raisins are used
- 1/2 cup grapenuts cereal, dry
- 1 cup buttermilk
- 1 large egg, beaten
- 1/2 cup sugar
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda

Step 1If using raisins: Place raisins in a small bowl and pour hot water on them. Allow to sit until called for in recipe. Place Grape-Nuts in another small bowl and pour buttermilk over cereal. Allow to sit for 20 minutes.

Step 2Preheat oven to 350 degrees. When Grape-Nuts have soaked 20 minutes add egg and sugar and stir to mix. Stir together flour, baking powder, salt, and baking soda. Stir dry ingredients into Grape-Nuts mixture. Drain raisins well. Fold into batter. Pour into a greased standard sized bread pan. Bake for 1 hour. Serve warm with butter.
