Ingredients

  • 2 cups rice & quinoa flour
  • 1 medium avocado
  • 1 cup honey
  • 2 - overripe bananas
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/4 cup vegetable oil
  • 1/4 cup cocoa powder
  • 2 - squares semi-sweet chocolate, chopped

How To Make gluten-free vegan chocolate avocado banana bread

  • Step 1
    Per serving (1/8th of loaf) Calories: 450 Fat: 14g *saturated:1, trans:0* Carbohydrate: 82g Protein: 5g Fibre: 5g
  • Step 2
    Pre-set oven to 350 Degrees
  • Step 3
    Scoop 2 cups of the rice and quinoa blend (I used TruRoots Organic Gluten Free Sprouted rice and Quinoa blend) into a blender, and blend on high until consistency of flour.
  • Step 4
    In a mixing bowl, blend avocado and banana until pureed. Add in honey, baking soda, baking powder, salt, lemon juice, and vegetable oil.
  • Step 5
    In separate bowl, sift together rice/quinoa flour and cocoa powder.
  • Step 6
    While mixer is on low, gradually add flour mixture until well combined.
  • Step 7
    Stir in chocolate chips. Spread batter in greased loaf pan.
  • Step 8
    Bake for 45-50 minutes depending on your oven.
