Ingredients

  • 2 c
    rice & quinoa flour
  • 1 medium
    avocado
  • 1 c
    honey
  • 2
    overripe bananas
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 tsp
    lemon juice
  • 1/4 c
    vegetable oil
  • 1/4 c
    cocoa powder
  • 2
    squares semi-sweet chocolate, chopped

How to Make Gluten-Free Vegan Chocolate Avocado Banana Bread

Step-by-Step

  1. Per serving (1/8th of loaf)
    Calories: 450
    Fat: 14g *saturated:1, trans:0*
    Carbohydrate: 82g
    Protein: 5g
    Fibre: 5g
  2. Pre-set oven to 350 Degrees
  3. Scoop 2 cups of the rice and quinoa blend (I used TruRoots Organic Gluten Free Sprouted rice and Quinoa blend) into a blender, and blend on high until consistency of flour.
  4. In a mixing bowl, blend avocado and banana until pureed. Add in honey, baking soda, baking powder, salt, lemon juice, and vegetable oil.
  5. In separate bowl, sift together rice/quinoa flour and cocoa powder.
  6. While mixer is on low, gradually add flour mixture until well combined.
  7. Stir in chocolate chips. Spread batter in greased loaf pan.
  8. Bake for 45-50 minutes depending on your oven.
