squares semi-sweet chocolate, chopped

How to Make Gluten-Free Vegan Chocolate Avocado Banana Bread

Step-by-Step

  • 1Per serving (1/8th of loaf)
    Calories: 450
    Fat: 14g *saturated:1, trans:0*
    Carbohydrate: 82g
    Protein: 5g
    Fibre: 5g
  • 2Pre-set oven to 350 Degrees
  • 3Scoop 2 cups of the rice and quinoa blend (I used TruRoots Organic Gluten Free Sprouted rice and Quinoa blend) into a blender, and blend on high until consistency of flour.
  • 4In a mixing bowl, blend avocado and banana until pureed. Add in honey, baking soda, baking powder, salt, lemon juice, and vegetable oil.
  • 5In separate bowl, sift together rice/quinoa flour and cocoa powder.
  • 6While mixer is on low, gradually add flour mixture until well combined.
  • 7Stir in chocolate chips. Spread batter in greased loaf pan.
  • 8Bake for 45-50 minutes depending on your oven.
