~ berr - iffic cream parfait ~

I created this wonderful recipe with extra fruit I needed to get used up and some fresh pound cake. It was a real hit with my kids and you don't have to heat up the house making it. I will repeat the recipe for the 4th of July. Enjoy!

Ingredients

  • THIS WOULD ALSO BE GREAT WITH JUST VANILLA PUDDING, IF IN A HURRY
  • 1 small ( 10 ounce ) pound cake - i used a store bought
  • 1 cup each - blackberries, strawberries and blueberries
  • 1/4 cup orange marmalade
  • 2 - 3 tablespoons orange juice
  • FILLING
  • 1/2 cup whipping cream
  • 4 ounces cream cheese, softened
  • 1 cup confectioners' sugar
  • 1/2 teaspoon each - orange extract & orange zest

How To Make ~ berr - iffic cream parfait ~

  • Step 1
    Wash and pat berries dry with paper towel. Mix berries together and set aside. In a small bowl, beat the cream until forms stiff peaks. In another bowl, beat cream cheese, confectioners' sugar, extract and zest, until smooth. Now, fold in the whipped cream. Chill while preparing cake. Slice cake into 12 slices, 1/2 inch wide. Brush one side with orange juice, then brush same side with marmalade. Cut each slice in half or 4ths.
  • Step 2
    In a parfait dish, martini glass etc, place 3 - 4 slices of cake with marmalade side facing center of glass.
  • Step 3
    Place mix of berries in bottom of each glass. Top with couple tbsp filling, more berries. Refrigerate until ready to serve. Can serve with a dollop whipped cream and more berries if desired.
