Pineapple Grilled Cheese/ Chive Grilled Cheese Sandwiches

Try other combinations with this basic cheddar cheese and cream cheese mixture- peanut butter and chocolate syrup or jam and honey or chopped ham and chives, etc...

shredded sharp cheddar cheese
2 oz
cream cheese, softened
2 slice
hearty white bread
2 slice
whole wheat bread
4 oz


1 Tbsp
fresh snipped chives
1/4 c
crushed pineapple, very well drained
1 Tbsp
brown sugar, firmly packed


1Prepare bread by spreading one side of 2 slices of each type of bread with butter.
Use a fork to mix cheddar cheese and cream cheese;blend well. Divide mixture into 2 equal parts and place in small mixing bowl.
Chive & Cheese:
To one of the bowl add the chives and paprika. Spread a generous portion on the unbuttered white slice and spread evenly. Place buttered white slice on top of the filling. Place the sandwich buttered side down in a skillet, Butter top of the bread in the skillet.
Pineapple & Cheese:
To the second bowl add the pineapple and brown sugar, mixing well to blend.
Spread a generous portion on the unbuttered side of wheat bread. Place buttered side of bread on top of filling, and place in skillet buttered side down. Butter top of bread.
Brown both sandwiches in skillet until golden brown on bottom then gently flip over and brown other side.
Any left over filling is great used as a dip for crackers or chips too.
