mustard and thyme braided bread

This bread goes well with some many things. To add even more zing, add 2 cups of extra sharp cheddar. Enjoy!

Ingredients

  • 3 cups flour
  • 2 cups wheat flour
  • 2 cups oats
  • 3 tablespoons active dry yeast
  • 2 cups whey (can replace with water)
  • 2 tablespoons dark brown sugar
  • 1 teaspoon salt
  • 1/2 cup grainy, spicy mustard
  • 3 tablespoons dried thyme
  • 3 tablespoons flaxseeds
  • - flour to knead

How To Make mustard and thyme braided bread

  • Step 1
    Heat whey. Add sugar and stir to dissolve. Then allow to cool to warm.
  • Step 2
    Add yeast and whisk leaving no clumps.
  • Step 3
    Let sit for 10 minutes, until bubbly.
  • Step 4
    In a mixing bowl, add all dry ingredients. Mix.
  • Step 5
    Then add mustard. Do not stir.
  • Step 6
    Pour in yeast mixture. Mix well. Should be quite sticky.
  • Step 7
    Dump dough onto flour surface. Knead with floured hands, adding flour when kneaded.

    Then in a lidded pot, spray with non-stick oil and set the dough in.
  • Step 9
    Allow to rise for 1 hr. Then remove and punch down. Knead once again for 2 minutes. Then put back in pot for another hour.
  • Step 10
    Then divide dough in half. Form into desired loaves. I like to make one smaller loaf sometimes and some braided dinner rolls.
  • Step 11
    Optionally sprinkle with kosher salt and cook in oven at 350 for about 40 min. The rolls about 20 min if you choose to do so.

    Also, you can optionally paint with melted butter, fresh out of the oven. Then allow to cool and serve.
