This is a basic muffin recipe that you can mix in any fruit. This is my mom's recipe from her days working at a railroad camp as a cook. She was a young girl who traveled many miles from Chicago; alone, to work at Camp 28 in northern Wisconsin. While working here she met her husband and raised her 8 children in this small Wisconsin town. These were hard times for many people, ingredients were hard to come by. She also threw in blueberries when she had them. It was a special treat when orange extract became available.

Ingredients
- 2 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1/4 cup shortening, melted and cooled
- 1 - egg, beaten
- 1 cup milk
- 1 cup blueberries
- 1 teaspoon orange extract
How To Make muffins

Step 1Sift dry ingredients together.

Step 2Mix egg, shortening, and milk together well.

Step 3Combine mixtures, stirring just enough to dampen flour. If using fruit add to milk mixture and stir in with that.

Step 4Fill greased muffin tins 2/3 full. Bake at 400 degrees for 25 minutes or til test done.
