Muffins

This is my mom's recipe from her days working at a railroad camp as a cook. She was a young girl who traveled many miles from Chicago; alone, to work at Camp 28 in northern Wisconsin. While working here she met her husband and raised her 8 children in this small Wisconsin town.
These were hard times for many people, ingredients were hard to come by.
She also threw in blueberries when she had them. It was a special treat when orange extract became available.
Ingredients

2 cflour
-
4 tspbaking powder

1/2 tspsalt

1/4 csugar
-
1/4 cshortening, melted and cooled

1egg, beaten
-
1 cmilk
-
1 cblueberries
-
1 tsporange extract
How to Make Muffins
- Sift dry ingredients together.
- Mix egg, shortening, and milk together well.
- Combine mixtures, stirring just enough to dampen flour.
If using fruit add to milk mixture and stir in with that. - Fill greased muffin tins 2/3 full. Bake at 400 degrees for 25 minutes or til test done.
