This is a basic muffin recipe that you can mix in any fruit. This is my mom's recipe from her days working at a railroad camp as a cook. She was a young girl who traveled many miles from Chicago; alone, to work at Camp 28 in northern Wisconsin. While working here she met her husband and raised her 8 children in this small Wisconsin town. These were hard times for many people, ingredients were hard to come by. She also threw in blueberries when she had them. It was a special treat when orange extract became available.

Ingredients

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/4 cup shortening, melted and cooled
  • 1 - egg, beaten
  • 1 cup milk
  • 1 cup blueberries
  • 1 teaspoon orange extract

How To Make muffins

  • Step 1
    Sift dry ingredients together.
  • Step 2
    Mix egg, shortening, and milk together well.
  • Step 3
    Combine mixtures, stirring just enough to dampen flour. If using fruit add to milk mixture and stir in with that.
  • Step 4
    Fill greased muffin tins 2/3 full. Bake at 400 degrees for 25 minutes or til test done.
