mama's zucchini bread
My mother in law used to bring these little loaves when she visited. I thought certainly they would be difficult to make. Although once over the initial fear I tried and was pleasantly surprised at how easy they are to bake. And so good! Serves to curb hunger any time, or as a great gift to send someone also travels well enough to bring with you on any occasion.

3 call purpose flour

3 tsppure vanilla extract

2 csugar

2 tspcinnamon

2 cshredded zucchini

1 coil

1 tspbaking powder

1 tspbaking soda

1 tspsalt
How To Make mama's zucchini bread

1Preheat oven 350 degrees. Oil baking loaf pans, set aside.

2Shred medium zucchini

3Mix thoroughly flour, baking soda, baking powder, salt, cinnamon.

4Make a well in center of flour mixture. Place eggs, vanilla, oil, vanilla, zucchini and stir, stir, stir until a nice smooth batter.

5Bake for 1 hr. Then cool & slice.
