mama's zucchini bread

My mother in law used to bring these little loaves when she visited. I thought certainly they would be difficult to make. Although once over the initial fear I tried and was pleasantly surprised at how easy they are to bake. And so good! Serves to curb hunger any time, or as a great gift to send someone also travels well enough to bring with you on any occasion.

Ingredients
- 3 - eggs
- 3 cups all purpose flour
- 3 teaspoons pure vanilla extract
- 2 cups sugar
- 2 teaspoons cinnamon
- 2 cups shredded zucchini
- 1 cup oil
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
How To Make mama's zucchini bread

Step 1Preheat oven 350 degrees. Oil baking loaf pans, set aside.

Step 2Shred medium zucchini

Step 3Mix thoroughly flour, baking soda, baking powder, salt, cinnamon.

Step 4Make a well in center of flour mixture. Place eggs, vanilla, oil, vanilla, zucchini and stir, stir, stir until a nice smooth batter.

Step 5Bake for 1 hr. Then cool & slice.
