Ingredients
- 1 package refrigerated pie crust
- 2 - egg yolks, beaten
- - green food coloring (preferably the paste)
- FILLING:
- 1-1/2 pound sweet potatoes (or yams..the orange ones)
- 1 tablespoon butter softened
- 1/4 teaspoon ground cumin
- - salt and pepper to taste
How To Make ghoulish empanads

Step 1peel, cook and puree sweet potatoes

Step 2combine pureed potatoes with butter, cumin and salt and pepper

Step 3Preheat oven to 450 while you assemble empanadas

Step 4unfold pie crust onto a floured board, using a 3" biscuit cutter cut 20-25 circles

Step 5scoop a tsp of filling into the center of each circle, fold over to a half moon shape, seal well with a fork or your fingers

Step 6combine egg and food coloring and brush onto empanadas

Step 7bake 10-12 minutes until crisp and cooked through. You could put a dipping sauce with this if you want, maybe a warm "blood" marinara or a garlic butter??
