  • 1 pkg
    refrigerated pie crust
  • 2
    egg yolks, beaten
  • ·
    green food coloring (preferably the paste)

  • 1-1/2 lb
    sweet potatoes (or yams..the orange ones)
  • 1 Tbsp
    butter softened
  • 1/4 tsp
    ground cumin
  • ·
    salt and pepper to taste

How to Make Ghoulish Empanads


  1. peel, cook and puree sweet potatoes
  2. combine pureed potatoes with butter, cumin and salt and pepper
  3. Preheat oven to 450 while you assemble empanadas
  4. unfold pie crust onto a floured board, using a 3" biscuit cutter cut 20-25 circles
  5. scoop a tsp of filling into the center of each circle, fold over to a half moon shape, seal well with a fork or your fingers
  6. combine egg and food coloring and brush onto empanadas
  7. bake 10-12 minutes until crisp and cooked through.

    You could put a dipping sauce with this if you want, maybe a warm "blood" marinara or a garlic butter??
