extra moist corny bread

This is a lot moister than many cornbread recipes because of the applesauce. Sidebar: save the corn liquid! I save all my veggie liquid and use that instead of water to make rice. It makes for intensely flavored rice with all the nutrients that leached out into the canning liquid!

Ingredients

  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 tablespoon baking powder
  • 3 tablespoons sugar
  • 1/3 cup applesauce, unsweetened
  • 3/4 cup milk
  • 1 large egg
  • 1 can corn, drained

How To Make extra moist corny bread

  • Step 1
    Preheat oven to 425 degrees. Spray an 8 or 9 in square baking dish with cooking spray. (or grease the dish)
  • Step 2
    Combine cornmeal, flour, baking powder and sugar in a large bowl. Mix well.
  • Step 3
    Add applesauce, milk, egg and corn. Mix until all ingredients are well blended.
  • Step 4
    Heat baking dish empty in oven for 5 minutes then remove and pour batter into dish. Bake 20 minutes or until toothpick inserted comes out clean.
