e-z old fashioned potatoe rolls

prep time Does NOT include rising time. That time depends on how warm (not hot) the area is you are proofing them (letting rise) Seems like a lot of cooks are unnessarly intimated by making breads.. This recipe is very easy and forgiving.

Ingredients

  • 1 cup warm water (not hot)
  • 1 1/2 tablespoons yeast
  • MIX AND SET ASIDE.. THIS IS YOUR WET MIXTURE.
  • 2 tablespoons butter, unsalted,melted
  • 2 tablespoons sugar
  • 1 - egg
  • 1 teaspoon salt
  • 1 cup pulp from cooled baked potatoe
  • MIX UNTIL SMOOTH... THEN ADD WET MIXTURE AND MIX WELL THEN ADD:
  • 3-4 cups (ap) flour, a little at a time
  • ADD FLOUR (1/2 C. AT A TIME )UNTIL DOUGH FORMS AND IS SLIGHTLY STICKEY
  • TURN OUT ON FLOURED SURFACE AND KNEED JUST UNTIL NO LONGER STICKEY, SMOOTH, AND SPRINGS BACK WHEN POKED.
  • DIVIDE INTO 16 PIECES AND ROLL INTO ROUNDS, WITH CUPPED PALM AGAINST HARD SURFACE.
  • PUT ON BUTTERED BAKING SHEET(S)... ALLOW TO DOUBLE IN A WARM PLACE
  • ONCE RISEN, BRUSH WITH ADDITIONAL BUTTER
  • BAKE IN A PREHEATED 400* FOR 13 TO 15 MIN .
