From "Go Bold With Butter" this is the cornbread for the cornbread chorizo dressing.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 - eggs
  • 2 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1 cup buttermilk

How To Make corn bread

  • Step 1
    Preheat oven to 400ºF. Butter 8-inch square baking pan.
  • Step 2
    In large bowl, stir together corn meal, flour, baking powder, baking soda and salt. In separate bowl, beat eggs together with buttermilk and butter.
  • Step 3
    Slowly add wet ingredients to dry ingredients, mixing just until combined. Do not overmix.
  • Step 4
    Place batter in prepared pan (batter will be thick). Bake for 20-25 minutes, or until bread is golden brown and a cake tester inserted in the center comes out clean. Cool on a cooling rack for 10-15 minutes before turning out of the pan.
