bread essentials: hearty gluten-free bread

This recipe comes from a neighbor of mine who used to own a restaurant in San Francisco. They catered to the health-conscious crowd, so she made a lot of gluten-free stuff. When she gave me the recipe, I was a bit skeptical, and although I did make a change or two, the final result won me over. This is not a “typical” gluten-free bread recipe, this one has a lot of body. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 5 large fresh eggs
  • 1/4 cup flaxseed meal
  • 1/4 cup almond butter
  • 2 tablespoons coconut flour
  • 1 1/2 tablespoons fresh clover honey
  • 1 tablespoon apple-cider vinegar
  • 1 teaspoon fresh baking soda
  • 1 teaspoon salt, kosher variety

How To Make bread essentials: hearty gluten-free bread

  • Step 1
    PREP/PREPARE
  • Step 2
    You will need a standard baking pan… something around 8 x 4 inches (20 x 10cm). If you are using a smaller container, you will need to adjust the baking time accordingly.
  • Step 3
    Gather your Ingredients (mise en place).
  • Step 4
    Place a rack in the lower position, and preheat the oven to 350f (175c).
  • Step 5
    Add all the ingredients to a stand mixer, or blender.
  • Step 6
    If you are using a stand mixer, use the paddle attachment.
  • Step 7
    Blend until thoroughly combined.
  • Step 8
    Line a baking pan with parchment paper, let it drape over the sides, and add the bread mixture.
  • Step 9
    Place into the preheated oven, and bake until a toothpick inserted in the center comes out clean, about 28 – 30 minutes.

    Allow to cool for 10 minutes, then slice and eat. Enjoy.
