bread essentials: hearty gluten-free bread
This recipe comes from a neighbor of mine who used to own a restaurant in San Francisco. They catered to the health-conscious crowd, so she made a lot of gluten-free stuff. When she gave me the recipe, I was a bit skeptical, and although I did make a change or two, the final result won me over. This is not a “typical” gluten-free bread recipe, this one has a lot of body. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 5 large fresh eggs
- 1/4 cup flaxseed meal
- 1/4 cup almond butter
- 2 tablespoons coconut flour
- 1 1/2 tablespoons fresh clover honey
- 1 tablespoon apple-cider vinegar
- 1 teaspoon fresh baking soda
- 1 teaspoon salt, kosher variety

Step 1PREP/PREPARE

Step 2You will need a standard baking pan… something around 8 x 4 inches (20 x 10cm). If you are using a smaller container, you will need to adjust the baking time accordingly.

Step 3Gather your Ingredients (mise en place).

Step 4Place a rack in the lower position, and preheat the oven to 350f (175c).

Step 5Add all the ingredients to a stand mixer, or blender.

Step 6If you are using a stand mixer, use the paddle attachment.

Step 7Blend until thoroughly combined.

Step 8Line a baking pan with parchment paper, let it drape over the sides, and add the bread mixture.

Step 9Place into the preheated oven, and bake until a toothpick inserted in the center comes out clean, about 28 – 30 minutes.

Step 10PLATE/PRESENT

Step 11Allow to cool for 10 minutes, then slice and eat. Enjoy.
