I found these bolillo rolls at the local marketplace. They were perfect for sandwiches. I had a salad ready for lunch, but didn't have time for both a sandwich and salad. So, I compromised! A veggie salad sandwich!. Great served with a side of potato salad or chips anytime.

- - bolillo rolls or sandwich rolls of your choice - 1 per person
- - mayonnaise
- - slice of cheese, your choice, optional
- YOUR CHOICE SALAD INGREDIENTS
- - romaine lettuce leaves, rough chop
- - cucumber slices
- - zucchini slices
- - tomato slices
- - green onion, thin sliced
- - sprouts
- - sweet and/or hot pepper, thin sliced
How To Make veggie salad sandwich

Step 1Slice open the bolillo roll, horizontally lengthwise.

Step 2Slather with mayonnaise.

Step 3Add the salad and enjoy.

Step 4You can also add mustard, salad dressing (sparingly) or any other vegetable to the salad that you like. (For people who love their meat, add thin slices of the meat of your choice.)
