In the Fall, or anytime close, I start turning everything into Pumpkin Spice or Gingerbread. So here's my Fall pancake recipe. I cook for kids and have given this recipe to many parents. Lots of parents tell me that their kids love these, which, of course, makes me very happy! I sneak in some vitamin A, and they don't even realize it!

Ingredients

  • 2 cups bisquick
  • 1 cup solid pack pumpkin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

How To Make pumpkin spice pancakes

  • Step 1
    In a large bowl, combine Bisquick, pumpkin, spices, sugar and baking powder. Add milk, eggs and vanilla and whisk or stir until everything is combined. Remember this is pancake batter, so don't make it smooth.
  • Step 2
    Heat your non-stick griddle or favorite pancake pan to 350 degrees. Use a scant 1/4 cup scoop for each pancake. When bubbles start to form and pop on top of pancake. Flip pancake and cook other side.
  • Step 3
    Remove from griddle and butter. Serve with real maple syrup.
