My husband, who is NOT a health nut loves these pancakes. I make them at least once a month. Yes, they're healthy, but also very yummy!

Ingredients For oatmeal-wheat pancakes w/ walnuts

  • 1-1/2 c
    ultra-fine old-fashioned oats, like an organic brand
  • 1-1/2 c
    whole wheat flour
  • 2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1-1/2 c
    buttermilk
  • 1 c
    fat-free milk
  • 1/4 c
    canola oil
  • 1 lg
    egg
  • 1/3 c
    splenda or sugar
  • 4 Tbsp
    chopped walnuts

How To Make oatmeal-wheat pancakes w/ walnuts

    In lg bowl, combine oats, flour, baking soda, baking powder and salt.

    In another bowl, combine buttermilk, milk, oil, egg and sugar. Mix w/ mixer on medium, until smooth. Mix wet ingredients w/ dry ingredients until smooth. stir in walnuts.

    Spray a medium skillet w/ cooking spray made w/ canola oil. Place skillet over medium heat. Ladle 1/4 cup batter into skillet, cook 2-4 min each side, or untill golden. repeat w/ remaining batter. serve w/ warm maple syrup.
