oatmeal black bread
This is a very different bread, that you cannot find in the stores. This recipe make two medium loaves, but why not try dinner rolls, well.

Ingredients
- BLACK BREAD DRY INGREDIENTS
- 1 1/2 cups oats
- 1 cup self rising corn meal
- 2 cups flour
- 1 1/2 cups wheat flour
- 1 tablespoon dark brown sugar
- 2 tablespoons cocoa, unsweetened
- 2 teaspoons instant coffee
- 1 teaspoon sea salt
- 2 tablespoons flaxseeds
- RISING AGENTS
- 3 tablespoons yeast
- 1 cup boiling water
- 1 cup milk
- 1 tablespoon dark brown sugar
- BLACK BREAD WET INGREDIENTS
- 2 tablespoons dark molasses
- 1 teaspoon vanilla
- 2 tablespoons water
- TOPPING
- 1 tablespoon kosher salt
- 1 tablespoon poppy seeds
- 1 tablespoon flaxseeds
How To Make oatmeal black bread

Step 1Mix all dry ingredients in a mixing bowl and set aside.

Step 2For rising agents, boil water then add to milk. Add brown sugar and stir. Allow to cool to warm, then add yeast and stir completely. Allow to become very bubbly and to grow in size. Maybe 10-15 minutes.

Step 3In a small bowl, whisk wet ingredients.

Step 4Add the rising agents and the wet ingredients to the dry mixture. Stir well. This should become quite sticky.

Step 5Turn dough out to a floured cutting board. With flour dusted hands, knead dough. Add flour as needed.

Step 6Place in a large pot with a lid; first spray pot with non-stick spray. Allow to double in size for one hour.

Step 7Dump dough back on floured cutting board. Punch down and knead. Place back in pot. Allow to rise for 1 1/2 hours.

Step 8Divide dough in halves. Form into two loaves. Place on cookie sheets sprayed with non-stick spray.

Step 9If making a circular loaf, cut an X atop. If making a French bread style loaf, just cut in a succession of slanted lines all facing the same way.

Step 10Rub loaves with oil or butter optionally. Then sprinkle with toppings.

Step 11Place in oven at 350. Cook for 45 minutes or so.
