no need to knead bread

I love bread with crunchy crust and a chewy crumb. It's divine alone or slathered with butter. This is so easy to do. Jim Lahey is a genius, I'm glad he's made this type of bread so public. It's only four ingredients, I changed the amounts to fit our taste. Try it out! You'll be very impressed!

Ingredients

  • 4 cups all purpose flour (i use unbleached)
  • 1/2 teaspoon instant yeast
  • 2 cups warm water
  • 2 teaspoons salt

How To Make no need to knead bread

  • Step 1
    Add all ingredients together and give is a good stir.
  • Step 2
    Cover, let rise anywhere from 12 to 20 hours.
  • Step 3
    Scrape dough out of bowl onto a very floured surface, fold all sides in (it will look a little like a box) and place in a dutch oven. If you don't have one then a 3 quart casserole dish will work. Whatever you use should be at least 4 inches deep. However, it cannot be anything plastic. Let rise another 2 hours covered.
  • Step 4
    Pre-heat oven to 450, cook bread covered with the lid for 30 minutes. Then uncovered anywhere from 15-30 more minutes (depends on how dark you like your crust)
  • Step 5
    Let it cool on a rack. Ready for cutting when it's reached room temperature.
