Ingredients

  • 1/4 cup chia seed flour
  • 1/4 cup quinoa
  • 1/4 cup sorghum flour
  • 1/4 cup millet flour
  • 1/4 cup buckwheat flour
  • 1 cup g/f flour mix (whichever you prefer)
  • 1 teaspoon unflavored gelatin
  • 1 1/2 teaspoons xantham or guar gum
  • 1/2 teaspoon salt
  • 1 cup warm water
  • 1 tablespoon agave syrup
  • 1 tablespoon molasses
  • 2 1/4 teaspoons active dry yeast
  • 3 large eggs
  • 3 tablespoons olive oil
  • 1 teaspoon apple cider vinegar

How To Make multi grain bread

  • Step 1
    Grease 8x4 loaf pan. Set aside. Combine first nine ingredients into a large mixer bowl.
  • Step 2
    Proof yeast using 1/2 c warm water, agave and yeast. You know its ready when its all foamy. Reserve the other 1/2 cup water for later.
  • Step 3
    In a smaller bowl whisk eggs, molasses, oil and vinegar.
  • Step 4
    Add wet ingredients to the flour mixture except the water. On low speed mix 4 minutes. Add the water as needed. The batter should look like heavy cake batter.
  • Step 5
    Spoon into prepared pan. Cover with either plastic wrap or damp towel. Let rise 15-30 minutes depending how cool your kitchen is. Preheat oven to 375 while waiting. Ready to be put in oven when it is level with top of pan.
  • Step 6
    Bake 60 minutes. Cover with foil after 20 minutes to prevent over browning. When done let cool 40 minutes before cutting. Enjoy!!!!!!
