  • 3 large eggs
  • 1 cup canola oil
  • 1 1/2 cups packed brown sugar
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 1/2 cup bran flakes
  • 1 teaspoon baking soda
  • 1 teaspoon powder baking
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1 cup chopped nuts

How To Make mom's zucchini carrot bread

  • Step 1
    cream together eggs,oil,zucchini,carrots,and vanilla. Add remaining ingredients. Pour into a greased loaf pan. Bake in a preheated 350 degree oven for 1 hour.
