These Johnny Cakes are delicious. I have been craving them, but I can't eat them made with wheat flour, so I thought I would try my hand at making them gluten-free--success! They are delicious served with butter, honey or syrup. They freeze well, too.

Photos are my own, and so is this humble recipe.

Method:
Griddle

Ingredients

DRY INGREDIENTS

1 cup gluten-free flour
2/3 cup yellow corn meal
1/3 cup powdered milk
2 tablespoons palm sugar
2 teaspoons baking powder
1/4 teaspoon salt

WET INGREDIENTS

1 cup water
3 tablespoons grapeseed oil
1/3 cup of heavy cream
1 egg
a little grapeseed oil for frying.

Step-By-Step

1Combine the dry ingredients in a small mixing bowl, and mix the wet ingredients in another bowl. Add the wet ingredients to the dry ingredients and mix well.
2Using a 1/4 cup measuring cup, scoop the batter (doesn't have to be full) and pour it onto the hot griddle that has been prepared with a little grapeseed oil. Cook the Johnny Cakes until the bubbles burst and they are brown on the bottom.
3Flip the cakes and cook on the other side until brown.
4Here is what they look like. Keep Johnny cakes warm until you have finished cooking all the batter.
5Enjoy!
